Penne With Spicy Vodka Tomato Cream Sauce

6 servings

Hands on: 25 minutes

Total time: 25 minutes

This classic combination gets a kick from red pepper flakes. For more heat use hot Italian sausage.

¾ pound penne

2 tablespoons olive oil

½ pound sweet or hot Italian sausage

4 garlic cloves, minced

½ teaspoon crushed red pepper flakes

1 (28-ounce) can crushed tomatoes

¾ teaspoon salt

2 tablespoon vodka

½ cup heavy whipping cream

¼ cup chopped fresh parsley

Prepare penne according to package directions. In large skillet over moderate heat, add oil. Remove sausage from casing, crumble and saute, continuing to break up the meat, until cooked through. Add garlic and red pepper flakes and cook, stirring until garlic is aromatic. Add tomatoes and salt and bring to boil.

Reduce heat and simmer 15 minutes. Add vodka and cream and bring to a boil. Reduce heat to low, add drained pasta and stir well to combine. Stir in parsley and serve immediately.
